Can you take the endurance mentality out of an endurance horse?

A couple of years ago, I purchased a 10-year-old horse Arabian gelding that had been used for endurance rides, thinking he would be a great trail horse because he had no doubt encountered practically everything a horse could encounter on a trail. He's wonderful, and I love him tremendously. BUT, is it possible to train the endurance mentality out of a former endurance horse? As soon as we hit the trail, he's ready to go -- FAST. If I let him trot, he just keeps trotting faster and faster, like we're in a race. It's takes awhile to get him to just relax and enjoy the scenery :-) Has anyone ever had this issue with a former endurance horse? Any advice?
