Looking for a horsey illustrator - suggestions?

I am in the middle of submitting manuscripts of a chidlren's storybook. However, some publishers want everything - they want the author to find an illustrator and submit the artwork along with the story. Any suggestions about this process? Or any suggestions about how to track down a "horsey" illustrator?
